Recipe—Finally

OK—so here it is…for all of you male readers…please do not take any “man points” away from me just because I am putting a cake recipe on my blog. Trust me…if someone you know and love will make this cake for you—I will be your new best friend.

One thing before I begin…Lucretia wanted me to emphasize that, even if you follow this recipe that you CAN NOT in ANY WAY overcook the cake!!! Ovens are different…so I hear…and so you must find what works for your kitchen. (WOW—I feel so unmanly right now.)

ALSO—I am putting the recipe on here exactly how it is written…‘Cretia said that people would understand…so, if you have ANY questions about the recipe and/or if something is not clear and you are tempted to e-mail in a question—let me go ahead and answer it for you - “I DON’T KNOW!” Really—like I said…I am merely writing what is on the card—I don’t know the answer to anything related to cake making; however, I know everything there is to know about cake consumption!!!

Here we go…(there is other news at the bottom for those not interested in my Martha Stewart moment for the day…BUT—trust me—this is one of the best cakes EVER…)

Red Velvet Cake

1 & 1/2 cup vegetable oil
1 & 1/2 cup sugar
2 eggs
2 & 1/2 cup flour
1 cup buttermilk (wow—I didn’t know that—I HATE buttermilk!)
1 tsp vanilla
1 tsp chocolate syrup
1 bottle (1oz) red coloring
1 tsp white vinegar

Icing:
1 box 4x powder sugar (please—I don’t know what the heck this means…I am so confused; however, ‘Cretia assured me that this makes sense!)
1 stick butter (soft)
8 oz cream cheese
1 cup chopped pecans

Cake:
Mix vegetable oil and sugar
Add egg one at a time
Alternate adding flour and buttermilk (once again—gross!)
Add vinegar, vanilla, chocolate and mix it all up…
Add food coloring and mix it up again…
Pour into three pans
Bake at 325 for 25 minutes (‘Cretia’s advice—try 20 minutes at first and then check it with a toothpick…then keep on trying until you know it is done in the middle.)

Icing:
Cream butter and cream cheese—mix
Add 4x sugar a little at a time
Add pecans (she has one of those pampered chef pecan crusher things…it’s a great way to relieve stress!)

Further Instructions:
Bring a piece to Perry so he can see if you have truly mastered the art of red velvet cake making!

In other news…

FIRST WEDNESDAY WAS AWESOME!!! We had an amazing service last night with over 1,600 peeps “in da house!” We will have another one on…say it with me…the first Wednesday in April. However, for those interested in a really cool Bible study—one of our home group pastors, Trevor Cox, is going to be leading a Bible study on the Gospel of John on Wednesday nights here at the building. I have heard nothing but positive things about this study…and Trevor is a gifted teacher…if you are interested you can either call our office (226-6585) or e-mail me and I will make sure the information gets passed along.

Marathon training update: This Saturday is the 13 mile run…we actually decided this morning to go ahead and do 13.1 and get the feel of going “half-way.” We did a three mile run and the people who I usually run with attempted to kill me…I think we did an 8:02 pace—which is HUGE for my big self!!!

Oh yeah—once again—if you see us running you can pray for us…BUT PLEASE…DON’T BLOW THE HORN! :-) We have no idea who you are…and to be honest…at that particular moment in time…we do not care. Trust me—we are trying to just put one foot in front of the other.
